Including veggies, especially green ones, in your diet is the number one thing you can do for health….but all that chopping gets tedious and time consuming. So, this Sunday, why not make it a Souper Sunday and make a big pot of yummy veggie soup? You can take the soup with you each day for lunch, or have a nutritious supper waiting for you when you get home…veggies simplified!
Souper Sunday Soup
add as many of these veggies to your liking to a nice, big pot…organic veggies if possible
butternut or other squash, peeled and cubed
carrots, peeled and roughly cut into 1 inch pieces
celergy, rough cut into 1 inch pieces
a few tomatoes, rough cut
a white or yellow onion, roughly cut
as many garlic cloves as you want
a couple of washed and chopped leeks
a sweet potato, washed and rough cut
a couple of golden or red beets, peeled and roughly cut
a handful of baby spinach or a handful of parsley or cilantro
a handful of washed and chopped kale
a chunk of ginger
and fill with water until the veggies are covered
Bring to a boil and then simmer for an hour or so until the veggies are soft, then blend the soup with an immersion blender.
serve topped with a sprinkling of an omega-3 rich seeds…pumpkin, sunflower, hemp hearts, flax…or better yet…a mixture of these.
